Ingredients:
For the Pancakes:
1 ¼ cups all-purpose flour
2 tbsp granulated sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup buttermilk
1 large egg
2 tbsp unsalted butter, melted
1 tsp vanilla extract
For the Garnish & Styling:
½ cup fresh blueberries
½ cup fresh raspberries
A few fresh mint leaves (for a pop of color)
¼ cup honey (warm, for drizzling)
Additional bowls of blueberries & raspberries for composition

Instructions:
Prepare the Pancake Batter:
In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk buttermilk, egg, melted butter, and vanilla.
Gradually mix wet ingredients into dry ingredients, stirring gently until just combined (avoid overmixing for fluffy pancakes).
Cook the Pancakes:
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
Pour ¼ cup batter per pancake, allowing space between them.
Cook for 2 minutes, until bubbles form on the surface and edges are set.
Flip and cook for another minute until golden brown.
