4 oz (120ml) Pisco (Peruvian brandy)

1 ½ oz (45ml) fresh lime juice

1 oz (30ml) simple syrup

1 egg white

Instructions

Chill the Glass: Place a cocktail glass in the freezer for a few minutes.

Shake the Ingredients: In a cocktail shaker, add Pisco, lime juice, simple syrup, egg white, and a handful of ice cubes.

Dry Shake (No Ice): First, shake without ice for 15 seconds to create a rich foam.

Shake Again (With Ice): Add ice and shake vigorously for another 15 seconds.

Strain & Serve: Strain into the chilled cocktail glass.

Create the Cinnamon Lettering:

Sprinkle a thin layer of ground cinnamon over a stencil that reads "PISCO PERU" (you can cut a stencil out of paper).

Carefully remove the stencil to reveal the letters on the white foam.
