Scallop with Caviar Butter
Ingredients:
4 fresh scallops (in shells, if possible)
2 tbsp unsalted butter
1 tbsp heavy cream
1 tbsp lemon juice
1 tbsp finely chopped chives
1 tbsp caviar (black or golden)
½ tsp sea salt
½ tsp black pepper
Edible flowers or microgreens (optional for garnish)
Seaweed (optional for plating)
Dry ice (for presentation, optional)
Instructions:
Prepare the Butter Sauce: In a small saucepan over low heat, melt butter, then stir in heavy cream, lemon juice, and chives. Remove from heat and let it cool slightly before folding in the caviar gently.
Sear the Scallops: Heat a non-stick pan over medium-high heat. Lightly season the scallops with sea salt and black pepper. Sear each side for about 1.5 minutes until golden brown. Remove from heat.
Assemble the Dish: Place the seared scallop in its shell. Spoon the caviar butter sauce over the top. Garnish with microgreens or edible flowers.
For the Smoky Effect (Optional): Arrange the plated scallop over seaweed or decorative elements on a plate. Add small pieces of dry ice around the plate and pour a little warm water to create the misty fog effect.
Serve Immediately and enjoy the luxurious, oceanic flavors.
