African-Inspired Beef & Mushroom Stew with Sides



 Main Dish: Beef & Mushroom Stew

Ingredients:

500g beef (preferably shank or tripe)


1 cup assorted mushrooms (button, morel, or wild mushrooms)


1 onion, chopped


2 cloves garlic, minced


1 tsp dried thyme


1 tsp smoked paprika


1 cup beef broth


1 tbsp vegetable oil


Salt and pepper to taste


Instructions:

Heat oil in a pot over medium heat and sauté onions and garlic until soft.


Add the beef, sear until browned on all sides.


Stir in thyme, paprika, salt, and pepper.


Add mushrooms and cook for 2 minutes.


Pour in beef broth, cover, and simmer for 1-2 hours until the meat is tender.


Adjust seasoning and serve hot.


Side Dishes:

Steamed Bread (Dombolo or African Dumplings)

3 cups flour


1 packet dry yeast


1 cup warm water


1 tsp salt


1 tbsp sugar


Instructions:


Mix dry ingredients, then gradually add water to form a dough.


Knead for 10 minutes and let rise until doubled.


Shape into small loaves and steam for 45 minutes until fluffy.


Pumpkin Mash

1 cup pumpkin, boiled and mashed


1 tbsp butter


Pinch of nutmeg


Salt to taste


Mix all ingredients until smooth and creamy.


Spicy Shredded Carrot Salad

1 cup shredded carrots


½ cup bell peppers, finely chopped


1 tbsp vinegar


1 tsp chili flakes


1 tbsp olive oil


Salt and pepper to taste


Mix all ingredients and chill before serving.
