Flavorful Platter



 Ingredients:

For the Spiced Rice:


2 cups basmati rice


1 tbsp oil or butter


1/2 onion, finely chopped


1 tsp turmeric


1 tsp curry powder


1/2 tsp paprika


1/2 tsp salt


1/4 cup bell peppers, chopped


4 cups chicken broth


For the Roasted Chicken Drumsticks:


4-6 chicken drumsticks


2 tbsp olive oil


1 tsp paprika


1 tsp garlic powder


1 tsp onion powder


1/2 tsp dried rosemary


Salt and pepper to taste


1 tbsp lemon juice


For the Herb-Roasted Baby Potatoes:


2 cups baby potatoes, halved


1 tbsp olive oil


1 tsp dried oregano


1/2 tsp garlic powder


Salt and pepper to taste


For the Bean Stew:


1 cup cooked beans (kidney or black-eyed peas)


1/2 onion, chopped


1/2 cup tomato sauce


1 tsp cumin


1/2 tsp chili powder


Salt to taste


For the Coleslaw:


1 cup shredded cabbage


1/2 cup shredded carrots


2 tbsp mayonnaise


1 tsp sugar


1/2 tsp lemon juice


Salt and pepper to taste


For the Tomato Cucumber Salad:


1 cup diced tomatoes


1/2 cup diced cucumber


1 tbsp olive oil


1/2 tsp lemon juice


Salt to taste


For the Beetroot Relish:


1 cup cooked beets, diced


1 tbsp vinegar


1 tsp sugar


Salt to taste


Instructions:

Prepare the Spiced Rice:


In a pot, heat oil and sauté onions until soft.


Add turmeric, curry powder, paprika, and chopped bell peppers.


Stir in rice and coat with spices.


Add chicken broth and salt, bring to a boil, then simmer until rice is cooked.


Roast the Chicken Drumsticks:


Preheat oven to 400°F (200°C).


In a bowl, mix olive oil, paprika, garlic powder, onion powder, rosemary, salt, and lemon juice.


Coat the drumsticks with the marinade and roast for 35-40 minutes until golden and cooked through.


Make Herb-Roasted Baby Potatoes:


Toss halved potatoes with olive oil, oregano, garlic powder, salt, and pepper.


Roast at 400°F (200°C) for 25-30 minutes until crispy.


Prepare the Bean Stew:


In a pan, sauté onions, then add tomato sauce, cumin, chili powder, and cooked beans.


Simmer for 10-15 minutes.


Make the Coleslaw & Salad:


Mix all coleslaw ingredients and chill.


Toss tomato cucumber salad ingredients together.


Prepare Beetroot Relish:


Mix diced beets with vinegar, sugar, and salt. Let sit for 10 minutes.


Assemble the Plate:


Arrange rice, chicken, potatoes, and sides on a plate.
