Fluffy Vanilla Pancakes with Cream Sauce & Strawberries



 Ingredients (Makes about 6 medium pancakes)

For the Pancakes:


1 cup all-purpose flour


2 tbsp sugar


1 tsp baking powder


1/2 tsp baking soda


Pinch of salt


1 egg


3/4 cup buttermilk (or milk + 1 tsp vinegar)


2 tbsp melted butter


1/2 tsp vanilla extract


For the Vanilla Cream Sauce:


1/2 cup heavy cream


1/4 cup sweetened condensed milk


1/2 tsp vanilla extract


Pinch of salt


Toppings:


Fresh strawberries (halved or sliced)


Maple syrup


Powdered sugar (optional)


👩‍🍳 Instructions:

1. Make the Pancakes:

In a bowl, mix flour, sugar, baking powder, baking soda, and salt.


In another bowl, whisk egg, buttermilk, melted butter, and vanilla.


Combine wet and dry ingredients until just mixed (don’t over-stir).


Heat a non-stick pan on medium, lightly greased.


Pour batter and cook until bubbles form on the surface, then flip and cook the other side until golden.


Keep warm while making the sauce.


2. Make the Cream Sauce:

In a saucepan, heat cream and condensed milk over low heat.


Stir in vanilla and a pinch of salt.


Cook for 3–5 minutes, stirring constantly, until it thickens slightly.


3. Assemble:

Stack pancakes on a plate.


Pour warm vanilla cream sauce over the stack.


Top with fresh strawberries.


Drizzle maple syrup if desired and dust with powdered sugar.


Bonus: Make It a Mimosa Brunch!

Fill a champagne flute half with orange juice and top off with sparkling wine or champagne. Garnish with a strawberry slice.
