French Toast with Berries & Yogurt



Ingredients:

For the French Toast:


4 slices of brioche or thick bread


2 eggs


½ cup milk (or plant-based milk)


1 tbsp sugar


1 tsp vanilla extract


½ tsp cinnamon (optional)


1 tbsp butter (for cooking)


For the Toppings:


½ cup fresh strawberries (sliced)


¼ cup fresh blueberries


½ cup Greek yogurt (or whipped cream)


1 tbsp honey or maple syrup


Powdered sugar (for dusting)


Fresh mint (for garnish)


Instructions:

Prepare the Batter:


In a bowl, whisk together eggs, milk, sugar, vanilla extract, and cinnamon.


Coat the Bread:


Dip each slice of bread into the mixture, ensuring both sides are evenly coated but not too soggy.


Cook the French Toast:


Heat butter in a non-stick pan over medium heat.


Cook each slice for 2-3 minutes per side until golden brown and slightly crispy.


Assemble the Dish:


Cut the toast into triangles and arrange them on a plate.


Spoon Greek yogurt over the slices.


Add fresh strawberries and blueberries on top.


Final Touches:


Drizzle with honey or maple syrup.


Lightly dust with powdered sugar.


Garnish with fresh mint.
