Gourmet Avocado Breakfast Sandwich (Two Ways)


 

Ingredients (for 2 sandwiches):

4 slices of brioche or thick white bread


1 ripe avocado


Salt & pepper (to taste)


1/2 lemon (for juice)


2 slices of cheddar cheese


2 slices of cooked ham


1 thick slice of Spam (or more if desired)


2 eggs


Butter (for toasting)


Optional: chili flakes or hot sauce


Instructions:

Mash the Avocado:


In a bowl, mash the avocado with a fork.


Add a squeeze of lemon juice, salt, pepper, and chili flakes if you like a kick.


Cook the Egg Omelet:


Beat the eggs, season with a bit of salt.


In a nonstick skillet, pour eggs to make a flat omelet. Cook and fold into a square shape.


Cook the Spam:


Slice the Spam thickly and grill it in a skillet until crispy on both sides.


Toast the Bread:


Butter the brioche slices and lightly toast them in a pan or toaster until golden.


Assemble:


Sandwich 1 (Ham & Cheese):


Bottom slice: mashed avocado


Add: 2 slices ham + 1 slice cheddar cheese


Top with toasted bread


Sandwich 2 (Spam & Egg):


Bottom slice: mashed avocado


Add: grilled Spam + 1 slice cheddar + folded omelet


Top with toasted bread


Serve with a hot cappuccino and enjoy a hearty breakfast!
