Grilled Chicken with Vegetable Rice and Tomato Salad


 Ingredients:

For the Grilled Chicken:

2 chicken drumsticks


1 chicken breast


2 tbsp olive oil


1 tsp paprika


1 tsp garlic powder


1/2 tsp black pepper


1/2 tsp salt


1/2 tsp dried oregano


1 tbsp lemon juice


1 tbsp chopped parsley


For the Vegetable Rice:

1 cup cooked rice


1/2 cup corn kernels


1/4 cup diced carrots


1/2 tbsp butter


1/2 tsp salt


1/4 tsp black pepper


For the Tomato Salad:

2 large tomatoes, chopped


1/4 small onion, finely chopped


1 tbsp olive oil


1/2 tsp salt


1 tbsp chopped fresh cilantro or parsley


Instructions:

Prepare the Chicken:


In a bowl, mix olive oil, paprika, garlic powder, black pepper, salt, oregano, and lemon juice.


Coat the chicken drumsticks and breast in the marinade. Let sit for at least 30 minutes (or overnight for better flavor).


Grill the Chicken:


Heat a grill pan or outdoor grill over medium-high heat.


Grill the chicken for 6-8 minutes per side, or until fully cooked (internal temperature of 165°F or 75°C).


Let the chicken rest for 5 minutes, then slice the breast into thin pieces and sprinkle with chopped parsley.


Prepare the Vegetable Rice:


In a pan, melt butter over medium heat.


Add diced carrots and corn, sautéing for 2-3 minutes.


Add cooked rice, salt, and black pepper, stirring well to combine.


Make the Tomato Salad:


In a bowl, mix chopped tomatoes, onion, olive oil, salt, and cilantro/parsley.


Let sit for 5-10 minutes to enhance the flavors.


Assemble the Dish:


Serve the grilled chicken alongside the vegetable rice and tomato salad.
