Loaded Beef & Egg Street Sandwich



 Ingredients:

For the beef:


1 lb ground beef or finely chopped steak


1 tsp cumin


1 tsp paprika


½ tsp chili powder


Salt and pepper to taste


1 tbsp oil


For the egg layer:


2 eggs


Salt and pepper


Optional: chopped onions or herbs


For the slaw:


½ cup shredded cabbage


2 tbsp mayo


1 tsp vinegar or lemon juice


1 tbsp finely chopped red onion


Salt and pepper to taste


Spicy Chipotle Sauce:


¼ cup mayo


1 tbsp chipotle sauce or sriracha


1 tsp lime juice


Pinch of garlic powder


To serve:


1 large hoagie roll or sub bun


1 tbsp butter (for toasting)


Fresh cilantro or green onions, chopped


Instructions:

Prepare the Beef:


Heat oil in a skillet. Add ground beef or steak.


Season with cumin, paprika, chili powder, salt, and pepper.


Cook until browned and slightly crispy. Set aside.


Make the Egg Layer:


Beat eggs with a pinch of salt and pepper.


Pour into a non-stick pan and cook into a flat omelet. Fold and set aside.


Mix the Slaw:


Combine cabbage, red onion, mayo, vinegar/lemon juice, salt, and pepper. Mix well.


Make the Chipotle Sauce:


Mix mayo, chipotle/sriracha, lime juice, and garlic powder.


Assemble the Sandwich:


Toast the hoagie roll with butter until golden.


Layer in the omelet, then the slaw.


Add cooked beef generously.


Drizzle with spicy chipotle sauce.


Top with chopped cilantro or green onions.


Serve hot with a side of fries or chips!
