Ingredients:
For the Pap (Sadza/Ugali):
2 cups maize meal (cornmeal)
4 cups water
½ tsp salt
For the Chicken Stew:
4–6 chicken drumsticks
1 onion, chopped
2 cloves garlic, minced
2 tomatoes, chopped
1 tbsp tomato paste
1 tsp paprika
1 tsp curry powder
½ tsp black pepper
1 tsp salt
1 tbsp oil
1 cup chicken broth or water
For the Creamed Spinach:
2 cups spinach, chopped
1 tbsp butter or oil
½ cup heavy cream or milk
1 clove garlic, minced
Salt and pepper to taste
For the Carrot Relish:
1 cup grated carrots
½ tsp chili flakes (optional)
1 tbsp lemon juice
½ tsp sugar
Salt to taste
Instructions:
Pap (Sadza/Ugali):
Bring 3 cups of water to a boil in a pot.
Mix 1 cup of maize meal with the remaining cup of cold water to make a paste.
Slowly pour the maize meal paste into the boiling water, stirring continuously to prevent lumps.
Reduce heat and gradually add the remaining maize meal while stirring, until thick.
Cover and let it cook on low heat for 10 minutes.
Chicken Stew:
Heat oil in a pot and sauté onions until soft.
Add garlic and cook for a minute.
Stir in tomatoes and tomato paste, cooking until soft.
Add chicken, paprika, curry powder, salt, and pepper, and brown for a few minutes.
Pour in chicken broth, cover, and simmer for 30–40 minutes until tender.
Creamed Spinach:
Heat butter in a pan and sauté garlic for a few seconds.
Add chopped spinach and cook until wilted.
Pour in cream and season with salt and pepper. Simmer for 5 minutes.
Carrot Relish:
Mix grated carrots, chili flakes, lemon juice, sugar, and salt in a bowl.
Let it sit for 10 minutes before serving.
Serve the pap with chicken stew, creamed spinach, and carrot relish. Enjoy! 😊🍽️
