Spicy Slow-Cooked Chicken in Rich Tomato Sauce



 Ingredients:

1 whole chicken (cut into pieces) or 1 kg mixed chicken parts


1 onion, chopped


2 cloves garlic, minced


1 tbsp ginger, grated


2 tomatoes, blended or chopped


1 tbsp tomato paste


1 tsp paprika


1 tsp curry powder


1 tsp chili flakes (optional)


1/2 tsp black pepper


1 tsp salt (or to taste)


1 tbsp oil


1 cup chicken broth or water


1 tbsp Worcestershire sauce (optional)


Instructions:

Sauté the Aromatics:


Heat oil in a large pot over medium heat.


Add chopped onions and cook until translucent.


Stir in garlic and ginger, cooking for another minute until fragrant.


Brown the Chicken:


Add the chicken pieces and sear them until lightly browned on all sides.


Create the Sauce:


Stir in the tomato paste and blended/chopped tomatoes.


Add paprika, curry powder, chili flakes, black pepper, and salt.


Mix well to coat the chicken in the seasonings.


Simmer to Perfection:


Pour in the chicken broth (or water) and Worcestershire sauce.


Reduce heat, cover, and let simmer for 45 minutes to an hour, stirring occasionally.


Final Touch:


Once the sauce thickens and the chicken is tender, adjust seasoning as needed.


Serve hot with rice, pap (ugali), or fresh bread.
